IRIO - A Recipe with a Difference

This traditional Kenyan recipe came from an Ashtead resident who grew up in Kenya. Irio is a dish made by the Kikuyu tribe, and is served on any occasion, for a family meal or at a wedding. Its ingredients can be varied according to personal preference - we have suggested spinach in place of the pumpkin leaves used by the Kikuyu.

Ingredients:
  • Potatoes
  • Beans (eg red kidney beans)
  • Any of peas, sweetcorn, spinach
  • Salt
  • Margarine

Place all ingredients in a large saucepan, with the potatoes on the bottom and the other vegetables in layers on top. Add water and salt, bring to the boil, and cook until the vegetables are soft. Mash all the ingredients together with some margarine. Irio is tasty and satisfying on its own, or can be served with meat or gravy.
